For you as a consumer as well as the welfare of the animal the flavour and texture of the meat is very important. It is now a well known fact that good intramuscular fat or ‘marbling’ is the key to unlocking the taste in beef. Unlike many modern breeds which require the laying down unwanted external fat before the formation of intramuscular fat the English Longhorn if grass fed correctly allow this marbling process without excessive external fat. This means you get healthy lean beef which is packed full of flavour
